Ambrosia Salad

Step into a world of fruity delight with this Ambrosia Salad, a classic dish that combines the tropical flavors of pineapple and coconut with the citrusy zest of mandarin oranges. Tossed with fluffy marshmallows, creamy sour cream, and the pop of maraschino cherries, this salad is a traditional favorite at holiday gatherings. It's a simple, no-bake dessert that's both refreshing and satisfying.

  • 2 cups pineapple (crushed or tidbits) drained
  • 2 cups coconut, sweetened and flaked
  • 2 cups mandarin oranges, drained
  • 2 cups sour cream (or sweetened whipped cream)
  • 2 cups miniature marshmallows
  • 1 cup maraschino cherries, drained and halved
  • 1 apple (peeled, chopped)
  • 1 mango (peeled, chopped)

Begin by draining the pineapple and mandarin oranges thoroughly. In a large mixing bowl, gently combine the fruits, except for the cherries. Carefully fold in the sour cream or sweetened whipped cream, depending on your preference for tartness or sweetness. Next, add the miniature marshmallows (plain or fruity) to the bowl, folding them in until they’re evenly distributed throughout the mixture.

Once all the ingredients are combined, chill the salad in the refrigerator for at least an hour to allow the flavors to meld together. Chilling also gives the marshmallows time to soften slightly, contributing to the overall creamy texture of the salad.

Just before serving, give the salad a gentle stir to refresh the mixture. Finally, fold in the halved maraschino cherries, being mindful to do this at the last minute to prevent them from bleeding into the salad and altering its appearance. Serve chilled and enjoy this sweet, creamy treat that serves 10-12 people.

NOTE: You can also use berries, bananas, or fruit cocktail.
