Ingredients

  • 4 large baking potatoes
  • splash of canola oil
  • salt to taste
  • 3 tablespoons vegetable oil
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/8 teaspoon pepper
  • 8 bacon strips, cooked and crumbled
  • 1-1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 green onions, sliced

Instructions

Start by preheating your oven to 350°F. While the oven is heating, clean your potatoes thoroughly, removing any bruises or discolored spots. To allow steam to escape during baking, stab each potato about 10 times. Next, take a small bowl and add a splash of canola oil. Dab each potato in the oil, ensuring it’s spread evenly around the entire spud. Lightly salt each potato before arranging them on a baking sheet. Bake for 60–90 minutes, or until the potatoes are tender when pierced with a fork and the internal temperature reaches 210°F.

Once the potatoes are cooled, cut them in half lengthwise and scoop out the pulp, leaving a 1/4-inch shell. Save the pulp for another use. Place the potato skins on a greased baking sheet or silicon mat. In a separate bowl, combine the vegetable oil, Parmesan cheese, salt, garlic powder, paprika, and pepper. Brush this mixture over both sides of the skins. Increase the oven temperature to 475°F and bake the skins for 7 minutes. Turn the skins and bake until crisp, about 7 more minutes.

Now, it’s time for the fun part. Sprinkle the cooked and crumbled bacon and shredded cheddar cheese inside the skins. Bake for an additional 2 minutes, or until the cheese is melted. To finish, top each potato skin with a dollop of sour cream and a sprinkle of sliced green onions. Serve immediately and enjoy the applause from your guests. Serves 8.
