  • 1 cup boiling water
  • 3 cups “All Bran” cereal
  • 1-1/2 cups sugar
  • 1/2 cup shortening
  • 2 cups buttermilk
  • 2 eggs
  • 2-1/2 cups sifted flour
  • 1/2 teaspoon salt
  • 2-1/2 teaspoons baking soda

Begin by preparing the wet bran mixture. Pour boiling water over a cup of bran cereal and allow it to sit, ensuring the bran fully absorbs the water and softens. Meanwhile, in a separate bowl, cream together the sugar, shortening, buttermilk, and eggs until achieving a smooth, well-integrated mixture.

Shift your focus to the dry ingredients; in another bowl, blend the sifted flour, salt, and baking soda together. Gradually merge the dry flour blend and an additional 2 cups of dry bran cereal into the creamed mixture, ensuring not to overmix to maintain a light muffin texture. Subsequently, fold in the previously set aside wet bran mixture.

Once combined, store the mixture in the refrigerator, allowing it to sit for 2 to 3 weeks as needed. Importantly, resist stirring the mixture once it’s refrigerated and you’re ready to bake.

When it’s baking time, preheat your oven to 400°F (approximately 200°C). Spoon the mixture into greased muffin tins, ensuring each is about 2/3 full. Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Be mindful not to over-mix during the combination steps to preserve the muffins’ light texture. Enjoy the delicious, hearty goodness of your bran muffins! Makes 3 dozen.
