Ham Fried Rice
- 4 green onions, sliced
- 1 medium carrot, diced
- 2 tablespoons oil
- 2 eggs
- 2 cups cooked rice, cooled
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1/2 cup ham, diced
Begin by chopping the green onions into small pieces. Separate the green parts from the white parts. Chop the carrot into small pieces. Set the veggies aside.
Heat 2 tablespoons of oil in a wok over medium-high heat. Start by making green onion oil using the white to light green part of the onion. Stir-fry it until fragrant.
Crack the eggs into the wok and quickly stir them to scramble.
Add the cooked rice to the wok and stir-fry until everything is well mixed and heated through.
Push the rice to one corner of the wok and add the soy sauce. Allow it to heat for a moment to develop a smoky umami flavor, then mix everything together. Add the oyster sauce and continue to stir-fry. Incorporate the chopped carrots and ham into the wok and stir-fry for an additional minute, ensuring they are evenly distributed. This recipe serves 2.
