  • 1/2 cup chopped onion
  • 1 pound Italian sausage (hot or mild)
  • 1/4 teaspoon garlic
  • 2 tablespoons Italian seasoning
  • 1/2 teaspoon black pepper
  • 12 ounces tomato paste
  • 24 ounces tomato sauce
  • 10 ounces lasagna (about 15 noodles)
  • 3 cups ricotta cheese
  • 2 eggs, slightly beaten
  • 1 pound mozzarella cheese, grated or sliced very thin
  • 1/2 cup grated parmesan cheese


Put sausage in skillet and begin cooking. Add onion. Cook until brown; drain excess fat. Add garlic, Italian seasoning, pepper, tomatoes and tomato paste. Sim-mer about 30 minutes, stirring occasionally. Cook Lasa-gna according to package directions while sauce is simmering. Combine Ricotta cheese with beaten eggs.

Spray 13×9-inch lasagna pan with cooking spray. Place 3 noodles across the bottom of the pan. Spread 1/3 the meat sauce over the lasagna. Add 1/3 of the Ricotta cheese mixture. Spread with 1/3 of Mozzarella cheese. Sprinkle with 1/3 the parmesan cheese. Place 6 lasagna noodles in pan (3 rows, 2 deep) and repeat filling layers. Place last 6 lasagna noodles and repeat remainder of filling layers.

Bake at 375Ā°F for 30-45 minutes (if cheese begins to brown, carefully put foil over top of lasagna trying not to touch foil on cheese or it will stick to foil). Let stand 10 minutes before serving so the filling will set slightly.
