  • 2 pounds frozen hash brown potatoes, thawed
  • 1 can cream of chicken or mushroom soup
  • 2 cups grated cheddar cheese
  • 2 cups sour cream
  • 1/2 cup onion, chopped
  • 1/4 cup butter, melted (for the mixture)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups crushed Corn Chex cereal (for topping)
  • 1/4 cup butter, melted (for topping)

Begin by preheating your oven to 350°F (175°C). In a large mixing bowl, combine the thawed hash brown potatoes with undiluted chicken or mushroom soup, depending on your preference. Add in the grated cheddar cheese, sour cream, and chopped onion for a rich, flavorful base. Melt 1/4 cup of butter and mix it into your potato blend, giving it a creamy texture. Season with salt and pepper, adjusting the amounts to suit your taste.

Once your mixture is well combined, transfer it to a buttered 9×13-inch baking dish, spreading it evenly. In a separate bowl, crush the Corn Chex cereal and mix it with another 1/4 cup of melted butter. This will be your crunchy topping. Sprinkle the cereal mixture over the top of the potato blend in the baking dish.

Bake your casserole in the preheated oven for about 45–50 minutes. You’re looking for a hot and bubbly texture, with the topping turning a golden brown. Once it’s baked to perfection, remove the casserole from the oven. For an extra decadent touch, sprinkle cooked bacon bits over the top before serving.

This Potato Casserole serves 8–10 people and is the perfect dish for a comforting family meal or a festive gathering.
