Texas Sheet Cake

  • 2 cups sugar
  • 2 cups flour
  • 1/4 cup cocoa
  • 1 cup butter
  • 1 cup water
  • 2 eggs, beaten
  • 1/2 cup buttermilk
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter
  • 6 tablespoons milk
  • 3 tablespoons cocoa
  • 1 cup miniature marshmallows
  • 1 teaspoon vanilla
  • 1 pound box powdered sugar
  • 1 cup chopped nuts


In a large mixing bowl, mix together the sugar, flour and cocoa. In a saucepan over medium heat, bring the butter and water to a boil. Pour the hot mixture over the dry ingredients and mix just until blended. Add in the beaten eggs. Combine the baking soda, salt, and buttermilk together then beat in. Mix in the vanilla and cinnamon. Bake in a greased and floured jelly roll pan (a jelly roll pan is a 13×18-inch cookie sheet with a 1-inch sides) for 30 minutes at 350°F.

While the cake is nearly finished baking, make the icing. In a small saucepan, combine the butter, milk, cocoa and marshmallows and stir together over low heat until the marshmallows are melted. Add vanilla, powdered sugar and nuts. When the cake is done, spread the icing over the hot cake.
