  • 2 cups flour
  • 2-1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 4 eggs, separated
  • 1 cup sour cream
  • 1-1/2 cups milk
  • 3/4 cup melted butter or oil


Begin by sifting together all the dry ingredients (flour, baking powder, baking soda, salt, and sugar) in a bowl.

In a separate bowl, beat together the egg yolks (but not the egg whites), sour cream, milk, and melted butter (or oil) until well combined. For flavor I like using half butter and for moisture I like use half oil. 

Gradually add the wet mixture to the dry mixture, stirring thoroughly until the batter is smooth and lump-free.

In another bowl, beat the egg whites until they form stiff peaks. Carefully fold the beaten egg whites into the batter, ensuring they are fully incorporated.

Preheat your waffle iron according to the manufacturer’s instructions. Pour the batter into the preheated waffle iron and bake until the waffles are golden brown and crispy.
